Filipino Stuffed Chicken (Rellenong Manok) Recipe

Rellenong Manok is a deeply festive Filipino dish. This meal is often seen on Christmas Eve or Thanksgiving feast for Filipinos. There are different kinds of Relleno: Rellenong Manok, Rellenong Bangus, Rellenong Pusit and Chile Relleno. The food is originally from Spain and Relleno means stuffed in Spanish. Rellenong Manok is a boneless chicken filled with multiple ingredients.

Rellenong Manok 

Ingredients: 

1 Whole Chicken,

5 cloves garlic, 

1 medium onion, 

1 green bell peppers,

2 stalks celery, 

1/2 lb smoked turkey, 

1/2 cup walnuts, 

4 cups bread, 

1/4 sundried tomatoes, 

50 grams of feta cheese, 

3 tbsp capers, 

1 tbsp oil, 

3 hard-boiled eggs, 

1/2 cup raisins.

Directions:

  1. Debone a chicken and marinate in soy sauce and kalamansi
  2. Preheat the pan 
  3. Pour 1 tbsp of oil
  4. Add 1/2 lb of the smoked turkey
  5. Dice 1 medium onions
  6. Crush 5 cloves of garlic 
  7. Chop 1 bowl of leeks
  8. Add 2 sliced stalk of celery
  9. Dice 1 green bell peppers
  10. Add 1/4 roasted tomatoes
  11. Pour 3 tbsp capers
  12. Add 1/2 cup raisins
  13. 4 cups of sliced bread, cubes
  14. Add 50 grams of feta cheese
  15. Add 1/2 cup of walnut
  16. Stuff the chicken with ground meat mixture
  17. Add 2 or 3 hard-boiled eggs. 
  18. Brush oil onto a non-stick pan.
  19. Lastly, Sew the ends and bake for about 45-60 minutes in a preheated oven at 350° Fahrenheit.
